The call
A restaurant reports their commercial cuber is running but producing no ice. It powers on, the indicators look normal, water is in the trough — and they are buying bagged ice twice a day.
There is no hard error code. At most a generic clean or long-cycle notice on the display, which the crew has ignored for months.
Work the sequence: on commercial ice the boring answer usually wins, because scale and water distribution starve the evaporator long before a sealed system fails. Watch a full cycle before you touch a component.

On a freeze cycle the pump circulates trough water over a chilled evaporator through the distribution tube, building clear cubes layer by layer. When the cube reaches size, the machine switches to harvest, warms the evaporator, and the slab slides off past the water curtain, tripping the curtain switch and starting the next cycle. Ice production is a water problem as often as a refrigeration problem.

- Water side: supply, inlet / float valve, trough, pump, distribution tube
- Freeze and harvest: evaporator, hot gas or harvest assist, curtain switch
- Heat rejection: condenser and condenser fan, plus ambient and water-quality conditions
Why this diagnostic order
Scale and water restriction cause far more no-ice calls than sealed-system faults, and they are visible with a flashlight in two minutes. Confirming the machine is actually attempting a freeze cycle tells you whether you have a control or a production problem. Only once water, airflow, and harvest are proven good does sealed-system diagnosis make sense.
