Ice Machine Not Producing

Commercial cuber ice machine (Manitowoc / Hoshizaki / Scotsman style) · Intermediate

Machine runs, water present, no ice. Water side and scale before anything sealed-system.

1Safety first

  • Open the disconnect or breaker and lock it out.
  • Confirm dead with a non-contact tester.
  • Watch sharp evaporator edges and standing water.
  • Gloves, eye protection, towels, and hand tools staged.

2First checks

  • Confirm the machine is actually attempting a freeze cycle.
  • Verify water is filling the trough and the float/inlet is working.
  • Read the machine's own indicators and clean/long-cycle notices.
  • Check bin thermostat / bin full switch is not holding the machine off.

3Narrow the system

  • Split it: water-side and scale vs harvest vs refrigeration side.
  • Time the cycle — long freeze with thin or no build points at water or airflow.
  • Observe the evaporator: uniform build, patchy build, or nothing?
  • Check condenser cleanliness and discharge air temperature.

4Highest-probability tests

  • Pull and inspect the water distribution tube for scale-blocked holes.
  • Check the water trough, float valve, and inlet screen for restriction.
  • Inspect the evaporator face for heavy scale.
  • Verify the water curtain seats and the curtain switch actuates.

5Common outcomes and watch-outs

  • Most common: heavy scale blocking water distribution, or a starved water supply.
  • Water quality drives repeat failures — set a cleaning interval in writing.
  • A dirty condenser will mimic a sealed-system problem; clean it first.
  • Only pursue sealed-system diagnosis after water, air, and harvest check out.
